FINALLY! My husband and I are doing the Zone "diet" for Crossfit (its supposed to be a performance diet, and is really easy to follow so I'm into it!)
I've made these muffins according to Barry Sears recipe and they are not so great. Good for you, but dry.
but, they are the perfect meal or snack on the go- oatmeal, fruit and high protien, so I kept at it. Tweaking the recipe each time, and I've finally found a winner! I omitted the oil, because I did that the first time I made them on accident, and found that they were better without it. BUT- the bonus is that have to put butter on them before you eat them to equal a Zone meal!
Blueberry/Banana Zone Muffins
whole recipe makes 4, 4block meals
1 1/3 Oat Flour- either buy from the store, or just grind up regular oats!
4 (1oz) scoops Vanilla Whey Protien
1 tbl Baking Powder
2 1/2 teas Pumpkin Pie Spice
4 Whole Eggs (I've tried with 8 whites, but i think the yolks add flavor)
8 teas sugar
2/3 cup applesauce
1/2 cup blueberries
1 1/2- 2 mashed ripe bananas
mix it all up, bake at 350 for 15 minutes or so. also, great as mini muffins! watch the oven, don't let them overcook, or they will be dry.
the bonus is that you HAVE to serve them with a little bit of butter for the fat to equal a zone meal!
