We did so well this week!
I made another batch of egg muffins, this time with chicken sausage, tomato, spinach and onion with cheese. I liked these the best so far. They lasted the three of us 3days. Then I moved on to breakfast burritos. Super easy, good for you and are really tasty.
Fill a whole wheat tortilla with refried low fat black beans. Top with scrambled egg whites and cheese and salsa. I add fresh cilantro as well and love it!
Food for the week was covered:
Monday- coconut chicken from time for dinner. I put it over mixed greens, added pineapple, strawberries and macadamia nuts. I took the sauce and thinned it out with pineapple juice to make a dressing for the salad and voilĂ ! Dinner was served. Took less then 5 min prep time (not including the Time For Dinner time)
Tuesday- BBQ chicken, salad and baked potatoes. Boring, but I LOVE baked potatoes especially at home. Then I can use as much toppings as I want because I know what is in them! So I load up on butter, sour cream and bacon bits. Love it.
Wednesday- date night. Went to Canyon Cafe. Love that place! Great margaritas
Thursday- I traveled but this was Nicks night for dinner. So they ate taco bell. Hmmmm
Friday-pasta. Made the Sweet Potato Gnocchi from Trader Joes. Fantastic, but not a ton of food. Doubled the dish by adding tons and tons of pulled chicken from a rotisserie chicken I bought. There was plenty of sauce from the gnocchi to cover it all and it was really good! Literally took 5minutes to make and Nick said it tasted like thanksgiving.
Saturday-I made a chicken salad with the rest of the chicken. Used celery, an apple, salt, pepper, basil, lemon juice, green onion and fat free
Plain Greek yogurt. Stirred it up and ate it over an avocado. Nick had it on a sandwich but it was really great either way. Yum!
Overall I feel like we did great. Nothing seemed too hard and with nplanning we should be ok. So far Nick seems fine making his own lunch so I bought him his bread, meat and cheese. I've gotten dinner and breakfast covered and am looking forward to next week. We actually did save a bunch of money doing this and Nick said he felt better all week since he'd been eating so healthy! Bonus :)
